- Add olive oil to a large Dutch oven or stock pot over medium-high heat. Sprinkle onion, garlic and celery with salt and cook until fragrant, about 10 minutes. Add apple and cook 5-10 minutes more, until brown and soft.
- Pour broth into pot, then add sweet potatoes. Bring to a boil then reduce to medium-low, simmering until sweet potatoes are softened, 20 minutes. Remove from heat and cool 15 minutes.
- Transfer soup to blender in batches, never filling more than halfway. Remove center blender cap and cover with a dish towel, blending until smooth and allowing steam to vent every few seconds.
- Transfer soup back to pot, gradually stirring in heavy cream and ginger and simmering for 5 minutes. Serve warm, garnished with bacon crumbles and sage. For extra flavor, reserve fat when cooking bacon and use fat in place of olive oil
