Creamy Tomato Soup

  1. Heat the oil in a pan over low heat. Saute the onion, herbs, and garlic. Add the flour and stir.
  2. Slowly add the chicken broth and stir. Keep stirring for a couple of minutes allowing the broth to thicken.
  3. Add the tomatoes and cook for several minutes.
  4. Add the coconut milk/cream.
  5. Cook for several more minutes adding the salt and pepper.
  6. Blend the soup with either a hand blender or if putting in an upright, blend a small amount at a time so the hot liquid doesn’t burst from the top.
