Crispy Cod Sandwich

Bite into this crispy baked cod sandwich coated with a mayonnaise sauce and topped with shredded carrots, cucumbers, radishes, and purple cabbage on top of toasted hamburger buns.


Select ingredients:


  1. Preheat oven to 425°F. Line a baking sheet with foil, position a wire rack on top of it and spray with cooking spray.
  2. In a shallow bowl, beat the egg white until frothy. Place cornflakes in another bowl.
  3. Sprinkle garlic powder, pepper and salt over cod. Dredge the cod in egg white, removing any excess. Cover the cod with cornflakes, pressing to help them stick.
  4. Arrange the cod on the prepared wire rack. Spray the cooking spray along the top and sides of the cod.
  5. Bake the cod for about 15 to 20 minutes, until golden brown and an instant-read thermometer inserted in the thickest part reads 145°F.
  6. In a small bowl, mix mayonnaise and relish. Toast the buns and spread the mayo sauce along the bottom halves. Place the cod on the bottom buns, followed by the fresh vegetables and the top bun. Enjoy!
