Mashed potatoes are a family favorite, and this crispy recipe is a different way to enjoy the beloved side dish. You could even use it to repurpose leftovers! Whether you’re celebrating St. Patrick’s Day, or simply looking for a delicious side to serve for dinner, in just 15 minutes, you can have this recipe ready to enjoy. And for a vegetarian version, simply skip the bacon!

  1. In a large bowl, mix together the mashed potatoes, bacon, cheddar cheese and the green onion. Whisk the salt, pepper and flour together in a shallow dish until well-combined.
  2. In a large nonstick skillet, heat the oil over medium-high heat. Portion the mashed potato mixture using a ¼-cup measure and form into 1-inch-thick cakes. Coat with seasoned flour, patting off any excess.
  3. Fry for 3 minutes per side, until golden brown. Serve immediately with sour cream.
