And for a vegetarian version, simply skip the bacon!
- In a large bowl, mix together the mashed potatoes, bacon, cheddar cheese and the green onion. Whisk the salt, pepper and flour together in a shallow dish until well-combined.
- In a large nonstick skillet, heat the oil over medium-high heat. Portion the mashed potato mixture using a ¼-cup measure and form into 1-inch-thick cakes. Coat with seasoned flour, patting off any excess.
- Fry for 3 minutes per side, until golden brown. Serve immediately with sour cream.
