An easy and healthy vegetarian crustless quiche recipe that is perfect for breakfast or brunch.
- Preheat oven to 350 degrees. Spray casserole dish and set aside.
- In a large mixing bowl, whisk eggs, milk, salt, pepper, and seasoning and set aside. In the casserole dish, arrange veggies on the bottom of the dish. Top the veggies with shredded cheese. Pour the egg mixture evenly over the veggies and cheese. Top with the feta cheese.
- Bake for 45 minutes or until the filling no longer jiggles. Cool for 10 minutes before serving
