Curried Asparagus Sushi Rolls

A fun, non-seafood take on sushi that the entire family can enjoy!

  1. Steam the asparagus for a few minutes until tender.
  2. While it is steaming, mix the curry and mayonnaise together.
  3. Spread the rice over two thirds of the nori, leaving at least an inch along the top free of rice. Spread the curry mixture thinly along the bottom section of rice. Lay the asparagus horizontally on top of the spread.
  4. Roll up the sushi roll and slice into eight slices. Repeat the roll up process with the remaining ingredients.
