Give your classic chicken salad a face lift with this spicy, flavor-packed version! Curry powder adds exotic heat, while fresh grapes and red bell peppers add sweetness and a pop of color to this perfect springtime dish.
Combine spices on a large plate. Dredge chicken breasts in spice mixture, coating each breast well.
In a large pan coated with cooking spray, cook chicken over medium-hight heat, about 4 minutes per side.
In a large bowl combine mayonnaise, celery, peppers, scallions and grapes, mixing well.
Remove cooked chicken from pan and chop roughly.
Once cooled, add chicken to vegetable mixture and mix well. Chill for at least 90 minutes.
