This slightly-sweet, slightly-spicy chicken curry dish creates a yummy gravy that turns an ordinary biscuit into a decadent topping nothing like Grandma used to make.
- Melt butter or oil in a skillet. Add frozen mixed vegetables, onion, celery, ginger, garlic, jalapeño and sauté on medium heat until tender.
- Add chicken and stir in curry, cayenne pepper, salt, crushed tomatoes, bay leaves and cilantro.
- Whisk flour into chicken broth and heat until thickened. Stir into chicken mixture.
- Top with biscuits and bake until biscuits are golden brown (12-15 minutes).
