This fresh salad is like hitting the reset button after heavy holiday meals. Packed with nutrients and colorful to boot, it's just the thing to get you back in the healthy eating grove in the new year. And if you use pre-cut veggies, it only takes a few minutes to throw together.
- For the salad, combine kale, broccoli, cauliflower, carrot, cabbage, cranberries and sunflower seeds in a large bowl and toss with tongs to mix.
- In a small bowl or jar, prepare the dressing by vigorously whisking or shaking the balsamic vinegar, olive oil, garlic, mustard, sugar, salt and pepper until the liquids emulsify.
- If serving immediately, pour the dressing over the salad and toss to combine. If not, serve on the side and drizzle just before enjoying as a packed lunch or afternoon snack.
