No cookout is complete without a bowl of potato salad. And this dill pickle potato salad recipe is just the savory dish to keep friends and family coming back for more.
- Place potatoes in a large pot and fill with enough water to cover potatoes by one inch. Bring to a boil, then reduce to a simmer and cook for 5 minutes or until the potatoes are tender, but not so soft they fall apart. Strain and transfer to a large bowl. Set aside to cool.
- Once potatoes reach room temperature, add celery, pickles, parsley, mayo, pickle juice, mustard, vinegar, salt and pepper. Using a spatula, carefully fold to combine until potatoes are coated. Add more salt or pepper to taste, then top with additional parsley and serve immediately or refrigerate overnight.
