Easter Cupcakes

These festive cupcakes are great alternatives to Easter eggs! You can make them even more fun when the family decorates them together!

  1. For the cupcakes: Preheat oven to 350 degrees and line muffin pan with cupcake liners. In a large bowl, combine eggs, oil, vanilla extract, buttermilk, and sour cream until smooth. Sift in cake mix and stir until smooth. Fill cupcake liners 3/4 full and bake for 16-20 minutes or until an inserted toothpick comes out clean. Let cool.
  2. For Icing: In a stand mixer, beat butter until smooth. Add powdered sugar, a little at a time, mixing to combine. Add vanilla extract. If icing is too thick, add milk 1 tablespoon at a time until desired consistency is reached. Pipe onto cooled cupcakes.
  3. Easter Egg Decoration: Add green food coloring to icing until desired color is achieved. Fill piping bag (with a grass tip attached) with icing, squeeze onto cupcakes to cover in grass. "Hide" the jelly beans in the grass.
  4. Carrot Decoration: Fill piping bag (with star tip in place) with icing. Pipe into a swirl on the cupcake. Arrange orange candy in a skinny triangle, top the carrot with green candy.
  5. Flower Decoration: Fill piping bag (with round tip in place) with icing. Pipe into a swirl on the cupcake. Arrange jelly beans around the outside of the cupcake in 2-3 rows, as needed, like flower petals. Pipe a circle in the middle and sprinkle with sanding sugar.
