- Heat olive oil in a large pot. Saute onions and garlic. Add in chicken broth and simmer.
- While broth is simmering, melt butter in a saucepan. Whisk in flour and cook until golden. Slowly pour in whole milk and heavy cream, while continuing to whisk.
- When mixture is smooth add in cheese and stir until melted. Add cheese mixture to the broth mixture and stir until smooth. Add in broccoli.
- Serve warm, garnished with bacon and smoked cheese.
