Easy Buckwheat Pancakes

Buckwheat pancakes are a satisfying breakfast idea the whole family will be asking you to make again. Top with whipped cream and fruit for extra sweetness!

- In a bowl, combine the buckwheat flour, the all-purpose flour, the sugar, the salt, the vanilla, the eggs, the baking powder, the baking soda, the canola oil and the milk. Mix everything together to create the batter. Don’t over-stir.
- Use a 1/4 cup measuring cup to ladle the pancake batter onto a hot, lightly greased griddle. This should create pancakes that are approximately 4 inches in diameter. Let them cook until bubbles start to form on top of the pancake. Use a spatula to flip the pancake over and cook for another minute or so.
- Top with butter, fresh berries, syrup and whipped cream.
