This easy chicken and broccoli stir fry recipe is a quick, one pan lunch or dinner solution you can make in less than 30 minutes. It's healthy too!
- Cook jasmine rice according to package directions.
- While rice is cooking, add 1 tablespoon olive oil, cubed chicken and garlic to skillet and cook until meat is browned and cooked. Take out and set aside.
- Using the same pan, add 1 tablespoon olive, broccoli and sliced peppers. Cook for 6 minutes, stirring occasionally.
- Add chicken back to pan. Pour in stir fry sauce and stir until chicken, broccoli, and peppers are coated. Serve chicken and broccoli mixture on top of rice. Optional garnish- toasted sesame seeds, red pepper flakes and/or green onions.
