- Toast the sandwich thin halves or wheat bread. Slice open the avocado, remove the pit, and spoon the flesh into a medium mixing bowl. Add fresh lemon juice and 1/2 tsp. greek seasoning. Mash with a fork to combine until avocado is smooth and spreadable, and seasonings are fully mixed in.
- In a separate mixing bowl, add the cucumber, olives, tomatoes, onions, feta cheese, olive oil, and remaining 1/2 tsp. greek seasoning. Toss to combine all ingredients.
- Divide the mashed avocado between the two toasted sandwich thin halves (or toasted bread). Top each avocado toast with half of the Greek vegetable mixture.
