Turning leftovers into soups and stews is a budget-stretching trick that savvy home cooks have been using for generations. This affordable, hearty pork soup is a perfect example: low-cost pork is bulked up with onions and potatoes, simmered with chicken broth and finished with a bit of heavy cream for a savings-packed meal the whole family will love.


Select ingredients:


  1. Heat the oil in a large pot set over medium heat. Add the onion and cook for 4-6 minutes or until softened. Add the garlic and cook for 1 minute. Add the pork and potatoes and sauté for 3-4 minutes or until warmed through.
  2. Pour the chicken broth into the pot and season with salt and pepper to taste. Cover and bring to a boil. Reduce to a simmer and cook for 10-15 minutes or until potatoes are tender. Add the spinach and heavy cream and cook for 2-3 minutes until spinach is wilted.
