Whether you're new to the quinoa trend or trying it for the first time, this recipe is one you'll love! It includes cucumbers & avocados for a tasty meal.


Select ingredients:


  1. Bring 2 Cups of water to a boil and add quinoa, then reduce to a simmer, cover, and let cook for 15 minutes or until the quinoa has absorbed all the liquid. Remove from heat, cover, and let sit for another five minutes before fluffing with a fork.
  2. While the quinoa cooks, prepare the other vegetables and combine all ingredients in a large bowl and toss to combine. Add additional salt and pepper to taste. Serve cold or at room temperature and store any leftovers in the fridge.
