- Place all ingredients except shrimp, parsley and Parmesan into a large sauté pan or skillet.
- Set over medium-high heat and bring to a simmer, cover with the lid crack and reduce heat to medium.
- Cook until almost all the liquid is absorbed, then add in the raw shrimp, cover and continue to cook until the shrimp are bright pink and firm.
- Toss with parsley and Parmesan and a bit more olive oil (if you like).
