Make the most of the refreshing, sweet taste of fresh berries this season with an easy layered cake recipe! Not only will everyone in your family love to eat this Summer Berry Lasagna, but it’s also a great opportunity for some quality time with your kiddos. After all, this recipe only requires mixing, layering and a little time in the refrigerator to set, so even your little ones can lend a helping hand. That makes this cake recipe extra sweet!
- Add the cream cheese, powdered sugar, vanilla and 2/3 cup of sliced strawberries to a blender. Blend ingredients beginning on low speed and then increasing to high speed until the mixture is smooth.
Pour the cream cheese mixture into a medium bowl. Gently fold in the Cool Whip until just combined.
Slice each pound cake horizontally into three equal slices. Place two slices side by side in the bottom of an 8x8 inch baking dish. Spread 1/3 of the strawberry mixture evenly on top of the cake.
Sprinkle with 1/3 each of the sliced strawberries and blueberries. Repeat the process two more times with the remaining cake and berries. Chill for at least 4 hours before serving.
