Looking for an easy one-pot lunch or dinner idea? Pasta is usually a go-to choice, but this one takes the cake with tomato, spinach, and shrimp!
- Cooked pasta according to the package directions.
- In a separate bowl combine shrimp, 1 teaspoon oregano, 1 teaspoon basil, parsley. Stir until shrimp are coated with spices.
- Heat olive oil and garlic to pan set on medium high. Add shrimp and cook until heated through. Drain pasta. Add spinach to the same pot that pasta cooked in and add hot pasta on top of spinach. Add 1 teaspoon basil, 1 teaspoon oregano and salt and stir so spinach will wilt.
- Add in diced tomatoes and top with shrimp.
