Egg, Spinach and Cheese Cups

A speedy, tasty bit-sized "omelette" that would be great for busy mornings or brunch with friends.


Select ingredients:


  1. Preheat oven to 400 degrees.
  2. Chop spinach into small pieces.
  3. Break eggs into large bowl.
  4. In bowl, combine all ingredients and mix well, making sure to break every egg yolk.
  5. Grease a muffin tin (or like a muffin tin with baking cups)
  6. Evenly pour mixture to fill 12 cups. Bake for 8-10 minutes, or until eggs are fully cooked. Serve hot.
