Eggnog Coffee Cake Muffins

Add a bit of holiday flavor to an ordinary morning! These eggnog-inspired muffins are inspired by coffee cake and just plain delicious.

  1. In a bowl, combine the flour, the brown sugar, the baking powder, the baking soda, the pumpkin pie spice, and the salt. Mix well.
  2. In a small bowl, combine the eggnog the eggs, the vanilla, and the melted butter.
  3. Add the wet ingredients to the dry ingredients and mix until smooth. The batter is very thick.
  4. Use muffin liners to line a 12-count muffin tin.
  5. Fill each cup ¾ full with batter.
  6. In another bowl, create the topping by combining the sugar, the brown sugar, the cinnamon, the butter, and the flour. Mash together until the consistency is somewhat dry and crumbly.
  7. Add a heaping tablespoon of the topping to the top of each muffin.
  8. Bake in a 350-degree oven for approximately 18 to 20 minutes.
  9. In a tiny bowl, create the glaze by combining the powdered sugar, the eggnog, the vanilla, and the cinnamon. Stir together and then drizzle over the muffins.
