Eggnog Pancakes

Use up your leftover eggnog with these festive pancakes! They feel extra special, but only require a few Food Lion brand items and other ingredients you probably already have in your fridge and spice cabinet. Serving six, it’s a great way to feed a group while sticking to your budget.

- Whisk the pancake mix and 1/2 teaspoon of nutmeg in a large bowl. Add the eggnog, eggs and oil and whisk to combine until large lumps disappear.
- Melt the butter in a large nonstick skillet over medium heat. Pour 1/4 cup of batter for each pancake and cook until bubbles rise to the surface. Flip the pancakes and cook 1-2 minutes or until cooked through. Repeat with the remaining pancake batter.
- Heat the maple syrup, cinnamon and 1/4 teaspoon of nutmeg in a small pot over medium heat. Cook for 5 minutes and serve with the pancakes.
Recipe Tip: Wipe the skillet clean between each batch of pancakes to prevent burned bits in your pancakes.
