Emerald Eggs

These eggs gain their vivid, emerald color from watercress and herbs. Their unique flavor is just the green you need for St. Patrick's Day.
Ingredients

- Halve the eggs lengthwise, scoop out the yellow and place in a food processor.
- Add mayonnaise (or Miracle Whip), honey mustard, pickle relish, watercress, chives, tarragon, lemon pepper and salt and process until smooth. (Note: for greener eggs, add slightly more watercress until desired color is obtained - but be cautious, as watercress can be bitter).
- Finely dice remaining piece of ham and gently fold into egg mixture.
- Fill eggs.
- Cut the other piece of ham into narrow 1/2” strips to use as garnish, along with pimiento, as desired.
