These eggs gain their vivid, emerald color from watercress and herbs. Their unique flavor is just the green you need for St. Patrick's Day.


Select ingredients:


  1. Halve the eggs lengthwise, scoop out the yellow and place in a food processor.
  2. Add mayonnaise (or Miracle Whip), honey mustard, pickle relish, watercress, chives, tarragon, lemon pepper and salt and process until smooth. (Note: for greener eggs, add slightly more watercress until desired color is obtained - but be cautious, as watercress can be bitter).
  3. Finely dice remaining piece of ham and gently fold into egg mixture.
  4. Fill eggs.
  5. Cut the other piece of ham into narrow 1/2” strips to use as garnish, along with pimiento, as desired.
