This veggie-inspired minestrone includes everything we love about this classic soup.

  1. In a large, deep saucepan over medium heat, saute the onions, celery, and carrots in the butter for several minutes, then add the garlic powder, onion powder, oregano, basil, salt, and pepper.
  2. Add in the tomatoes, tomato paste, chicken broth, kidney beans, and pasta, and continue cooking for approximately 20 minutes until all ingredients are soft and the soup is thoroughly heated.
  3. Serve warm; sprinkle with grated Parmesan and chopped chives if desired.
