- Heat the oil in large skillet over medium-high heat. When the oil shimmers, add the onions and bell peppers and sauté until soft, about 8-10 minutes, stirring frequently. Then add the mushrooms and sauté for an additional 3-5 minutes or until soft. Add the chili powder, cumin, garlic powder, and salt and stir to combine.
- Remove from heat, then serve family-style with a side of black beans, sliced avocado, and lime wedges or distribute the veggies evenly between the tortillas and serve hot.
