Fennel and Red Cabbage Salad with Mint Vinaigrette

Fresh, with a fresh taste of citrus for a bright and delicious salad.


Select ingredients:


  1. Prepare the dressing: Whisk together vinegar, mint, orange juice, honey and mustard. While continuing to whisk, slowly drizzle in olive oil to emulsify.
  2. Toss fennel and red cabbage together in a large salad bowl. Drizzle with vinaigrette and top with orange supremes just before serving.
  3. Featured technique: To cut oranges into supremes, begin by cutting off the top and bottom of the oranges. Slice along the curve of the orange to remove the pith and peel from the fruit. Once the peel is removed, cut along either side of the naturally formed orange segments towards the center of the fruit to release the flesh from the skins. Save the “guts” of the orange and squeeze them over a bowl to get enough juice for the Mint Vinaigrette.
