This light, healthy salad is versatile and can be made as the main meal or as a complimentary side to any dish. The proteins can also be switched up to make the salad vegan or not!
lace a small amount of water in the bottom of a fry pan. It won’t come up more than 1/8th of an inch on the side of the pan.
- Heat the water over medium-high heat and add the onion, fennel and carrot slices.
- Simmer with or without the lid on until all of the water has evaporated and the vegetables are tender.
Assemble the salad and top with your favorite dressing.
