- Melt 4 tablespoons of the butter in a medium sauté pan over medium heat. Add the onion, salt and pepper and cook for 5 minutes. Reduce the heat to medium-low and cook the onions, stirring occasionally, for about 25 minutes, until caramelized.
- Preheat the grill to medium heat.
- Spread half a tablespoon of butter on one side of each slice of bread. With butter side down, top four slices of bread with two slices of cheese and the caramelized onions. Place a slice of cheese on top of each caramelized onion portion. Finish with the remaining slices of bread, butter side facing up, to form sandwiches.
- Place the sandwiches on the grill and cook for 2-3 minutes on each side until the cheese is melted and bread is golden brown.
Recipe Tip: To prepare in a sauté pan, first heat the pan to medium heat. Add the sandwiches and cook for 4-5 minutes on each side until golden brown.
