- Place egg yolks in mixing bowl. Add remaining ingredients except egg whites to egg yolks. Freshly grate cinnamon and fold into mixture and beat until all are mixed well together.
- In another bowl, use a mixer to make stiff peaks out of the egg whites. Next, stir soy milk in with yolks and spice mixture, followed by egg whites.
- In the third bowl, use a frother to whip heavy cream into foam (substitute frother with wire whisk, but won't be as frothy. You can get a frother at almost any store that sells kitchen items.)
- Pour egg nog into goblets and top with foam. Place a cinnamon stick atop or in each drink and serve immediately.
