Quinoa has hit center stage in recent years as being one of the most healthy foods you can eat as part of a well-rounded, balanced diet. Quinoa is high in fiber and protein so you will stay full for hours after eating. The beans, peppers and tomatoes add color and nice crunch to this dish that could serve as an entree or side dish.
- Cook quinoa with oil and water per packaging instructions. Add 1 tsp. of basil, oregano, and parsley.
- Clean black beans and cook in water.
- Chop onions, tomatoes, and peppers into small pieces.
- Cook and crumble bacon on top for some crunch.
- Toss together and serve
