Thic cool and refreshing citrus treat is a perfect light dessert.
- Combine almonds/almond meal, cookies, ginger, and butter. Press the crumbs onto the bottom of a 9-in.-square pan. Freeze until firm, about 15 minutes.
- Soften ice cream at room temperature for about 10 mins. Stir and spread over crust. Cover and freeze for an additional 30 minutes.
- Soften sherbet for 5 to 10 minutes and stir. Spread over the ice cream layer. Cover with plastic wrap and freeze 4 hours or overnight.
- When serving, use a sharp knife dipped in hot water to cut the cake. Continue to dip in the water to get a clean cut.
