  1. Combine almonds/almond meal, cookies, ginger, and butter. Press the crumbs onto the bottom of a 9-in.-square pan. Freeze until firm, about 15 minutes.
  2. Soften ice cream at room temperature for about 10 mins. Stir and spread over crust. Cover and freeze for an additional 30 minutes.
  3. Soften sherbet for 5 to 10 minutes and stir. Spread over the ice cream layer. Cover with plastic wrap and freeze 4 hours or overnight.
  4. When serving, use a sharp knife dipped in hot water to cut the cake. Continue to dip in the water to get a clean cut.
