Fudgy Mint Oreo Brownies

Whoever combined mint and chocolate together for the first time was a genius. It's one of the best food combinations out there. Mint was my Dad's favorite flavor, so we always had mint ice cream in the house and little mint candies on the counter. Mint chocolate reminds me of my dad, so I decided to get in the St. Patrick's Day spirit and whip up some chocolate mint brownies using mint Oreos for my Dad. I think I became his favorite as soon as he took one bite. These brownies have a flakey and crisp crust filled with a chocolaty fudge center. They are to die for!

  1. Prepare your ingredients and preheat oven to 350 degrees.
  2. Melt butter on medium heat over the stove.
  3. Add semi-sweet chocolate chips and continue to stir. *If you love the minty flavor, replace half of the semisweet chocolate chips with mint chips.
  4. Continue to stir on low heat until the chocolate is melted.
  5. Once the chocolate chips are melted, add the unsweetened cocoa powder.
  6. Stir until the chocolate is lump free and smooth.
  7. Add the chocolate to a new bowl and place it on the counter or in the refriderator to cool for ten minutes.
  8. While the chocolate is cooling, mix the eggs and sugar together.
  9. Mix in the vanilla extract, mint extract, and salt.
  10. Mix in the cooled chocolate.
  11. In a small bowl, combine the flour and the baking soda. Turn speed down to low and beat in the flour mixture slowly.
  12. Coat a baking dish with butter and pour the batter into the baking dish.
  13. Break apart 10-15 Oreos and spread them out at the bottom of the baking dish. This will give the brownies a minty and crispy crust.
  14. Pour the batter over the Oreo pieces and use a spatula to spread the brownies out evenly.
  15. Bake 45-50 Minutes.
  16. Allow the brownies to cool for about an hour before serving.
  17. Slice the brownies into fifteen giant pieces!
