These easy to make funnel cakes are coated in confectioners' sugar for a sweet and festive dessert perfect for any fun occasion.
- Beat the eggs in a large bowl. Blend in milk, water and vanilla. Add flour, sugar, baking powder and salt to another bowl and whisk. Add this into the egg mixture and mix until smooth. Add oil in an electric skillet or deep-fat fryer and heat to 375°.
- Place your finger over the bottom of a funnel spout and ladle 1/2 cup batter into the funnel. Hold the funnel several inches above the oil. Move your finger and slowly move the funnel in a spiral motion until all the batter is out.
- Fry the batter for 2 minutes on each side or until golden brown. Transfer to paper towels and let drain. Sprinkle confectioners' sugar on the cakes and enjoy.
