With just 20 minutes involved from start to finish, this simple side is a great addition to holiday meals and weeknight dinners alike.

- Bring a large pot of water to a boil. Add the cauliflower and cook for 10 minutes or until soft and tender. Drain.
- While the cauliflower is cooking, melt the butter in a small sauté pan over medium heat. Cook the garlic for 1-2 minutes until fragrant and softened.
- Add the cauliflower, butter and garlic mixture, milk, cheese, salt and pepper to a food processor and process until smooth.
- Transfer the cauliflower mixture to a serving bowl and mix in the chives and thyme. Serve immediately.
Recipe Tip: For a thicker consistency, steam the cauliflower for 7-9 minutes in a pot with a steamer basket to reduce the amount of liquid.
