- Heat the oil in a large skillet over medium-high heat. Add the garlic and cook until fragrant, about 30 seconds. Add the shrimp, lime juice and taco seasoning and cook, stirring occasionally, until the shrimp are fully cooked, about 3-5 minutes. Remove from the heat.
- Divide the lettuce among four bowls. Top with the avocado, cheese, tortilla strips and cooked shrimp. Drizzle the ranch dressing over the salad, to taste. Top with the sour cream and enjoy.
Recipe Tip: Substitute scallops, or 1 pound of salmon fillets cut into 1/2-inch pieces, for the shrimp!
