Brussels sprouts and butternut squash are a match made in heaven. Throw in a hefty portion of garlic and you have a side dish worth passing around the dinner table.
- Preheat oven to 350 degrees. In a bowl, combine Brussels sprouts, squash, oil, garlic and salt and toss until vegetables are evenly coated.
- Transfer to a baking dish or tray and place in the oven for 25 minutes or until Brussels sprouts begin to blacken around the edges.
- Remove from oven, transfer to a serving dish, add pepper or more salt to taste and serve hot.
