- Toss carrots and garlic in oil, salt and thyme. Place in a roasting pan and bake in an oven heated to 400 degrees. Cook for 30 minutes, tossing and rotating once halfway through. When cooking is complete and carrots are tender, add pepper to taste, and serve immediately.
