Gluten-free Cheese Frittata

What's better than a basic cheese frittata? Try this recipe and then experiment with adding in ham, tomatoes, bacon, spinach, quinoa—you name it!

  1. In a skillet, sauté the onions and the sweet pepper in butter until the onions are clear. Transfer the vegetables to the bottom of an 8x8-inch baking dish.
  2. In a bowl, whisk the eggs, milk, cheese, salt, pepper, and basil. Pour the egg mixture over the vegetables.
  3. Bake at 350 degrees for 40 minutes or until the eggs are firm, then sprinkle the mozzarella cheese on top and bake for another 5 to 10 minutes. Serve hot.
