- In a large bowl, mix together the tapioca flour, the oat flour, the applesauce, the peanut butter, the eggs, the vanilla, the apple cider vinegar, the baking powder, the cinnamon, the salt, and the almond milk.
- Mix well. The batter will be semi-thick.
- Grease and heat your waffle iron. Pour approximately ½ cup of batter into the waffle iron and cook for about 5 minutes, until the waffles are light brown.
- Top with your choice of blueberries, bananas, butter, and/or maple syrup.
