In the bowl of a stand mixer, cream together the cream cheese and butter until smooth, then add the corn syrup and brown sugar. Once those are combined, add in the vanilla and egg, and mix well.
Add in the flour and baking soda. Mix until thoroughly combined.
Add in the caramel chips.
Spoon the mixture into your prepared pie crust and bake in a 350-degree oven for about 35 minutes.
Serve warm, topped with your choice of caramel sauce, whipped cream, chocolate syrup, or all three!
