Grandma Smith's Old-Fashioned Oatmeal Cookies

My grandmother, who was born in 1886, was a wonderful cook. One of our family's favorite things was her crispy oatmeal cookies.This recipe can be easily doubled.

- Preheat oven to 350.
- In a large bowl, cream together shortening and sugar. Beat in egg.
- Place flour, soda and salt in sifter and sift into butter mixture. Add vanilla. Mix well. Stir in oatmeal.
- The original recipe calls for rolling the dough into logs, in wax paper, and chilling. Slice into 1/4" rounds and bake on ungreased sheet. The way I do it is to chill the dough, then form into 1" balls, and bake on parchment paper lined sheet. Baking time, about 12 minutes
