This recipe is special to me. My grandpa used to bake for us kids all the time and that is why I love baking so much. These gumdrop cookies were his specialty. They bring me so much comfort along with good memories. They're so soft, chewy, and delicious. They are perfect for the holidays and the guest will be begging you for the recipe.
Gather your ingredients
Slice all the gumdrops in half.
*If you do not like the taste of black licorice, make sure to remove the purple ones.
In an electric mixer, cream together the butter and brown sugar on medium speed.
Slowly, beat in the egg and vanilla for 30 seconds.
In a large mixing bowl, combine the flour, salt, oats, baking soda, cinnamon, and baking powder.
Gradually add the flour mixture to the wet ingredients and combine.
Throw in the gumdrops.
Stir on slow speed until combined.
Place heaping tablespoon sized drops of dough two inches apart on a baking sheet.
Bake 8-11 minutes at 350 degrees. The centers should be soft and the outsides should be lightly brown when they are done.
