These adorable bite-sized treats are perfect for a morning snack or weekend brunch. They are easy to whip up and a pleasure to eat.
- Preheat your oven to 350 degrees F. Then, in a bowl, combine the oats, juice and honey or syrup and stir gently until all the liquid has been absorbed. Spoon about one tablespoon of the mixture into each cup of a mini muffin tin and use your fingers to compress the oats against the bottom and sides of the cups, up to the rim.
- Place in the oven and bake for 15 minutes or until the oat cups have hardened and turned golden brown. Then remove each cup from the pan and allow to cool for a few minutes.
- When cool, spoon in just enough yogurt to fill 3/4 of the cup, then top with blueberries and sliced strawberries. Serve immediately or refrigerate until ready to eat.
