Greek Cucumber Salad

This recipe serves two, but can easily be doubled, tripled…the sky is the limit. Out of season it is best to use cherry tomatoes. This can be served as a side, on top of lettuce, or in pita sandwiches such as gyros or falafel.

  1. Peel the cumcumber
  2. Chop the peeled cucumber and add to a medium mixing bowl.
  3. Halve the cherry tomatoes.
  4. Measure out feta cheese.
  5. Dice the olives into smaller, bite sized pieces.
  6. Mix the olive oil, vinegar, oregano and salt/pepper on a small plate.
  7. Add the olive oil mixture to the chopped salad and mix well.
