This recipe serves two, but can easily be doubled, tripled…the sky is the limit. Out of season it is best to use cherry tomatoes. This can be served as a side, on top of lettuce, or in pita sandwiches such as gyros or falafel.
Peel the cumcumber
Chop the peeled cucumber and add to a medium mixing bowl.
Halve the cherry tomatoes.
Measure out feta cheese.
Dice the olives into smaller, bite sized pieces.
Mix the olive oil, vinegar, oregano and salt/pepper on a small plate.
Add the olive oil mixture to the chopped salad and mix well.
