You'll feel like you died and went to the Mediterranean when you bite into this dip.
In a medium-sized mixing bowl, combine all ingredients, except olive oil.
On a serving platter, or flat bowl, coat the bottom in a thin layer of olive oil.
Pour dip mixture on top.
Pour remaining olive oil over top of dip.
Serve room temperature or slightly chilled with pita chips or crackers of choice.
