Green Chile Cheeseburgers

The traditional cheeseburger is a family favorite, especially during grilling season and on spring and summer holidays like Memorial Day. But, if you want to put a spin on the classic burger and try something new, this green chile cheeseburger recipe is a great (and zesty) choice. With diced green chiles mixed into the hamburger meat, plus tangy pickled onions and pepper jack cheese melted on top, this burger packs a little kick that’ll bring some excitement to the table. Want to save a little prep time? Skip pickling the onions yourself and grab a jar of pickled onions from your local Food Lion.

- In a medium bowl, whisk together red wine vinegar, hot water, sugar and 1 tsp. of kosher salt until salt and sugar are completely dissolved. Add red onion, pushing down to submerge. Let onions marinate for 20 to 30 minutes at room temperature, or up to 3 days in the refrigerator.
- Preheat a grill, grill pan, or cast-iron skillet over high heat. In a large bowl add ground beef, diced chiles, ground cumin, black pepper and remaining 2 tsp. of kosher salt. Mix just to combine, but do not overmix. Divide into 4 equal patties.
- Brush pan with vegetable oil and cook burgers 3 to 4 minutes per side, flipping when first side is well-browned. During the final minute of cooking, top each burger with a slice of cheese and let melt.

Transfer burgers to toasted buns, top with pickled red onions and serve immediately.
*Tip: Speed up pickled red onions by using clean hands to gently massage the sliced onions in the pickling liquid for 2 to 3 minutes.
