This light, spicy salsa is the perfect side for your cinco de mayo meal.


Select ingredients:


  1. Prepare tomatillos and jalapenos for charring by moving your oven rack about four inches below the broiler.
  2. Preheat broiler on high heat. Place tomatillos and jalapeno on a baking sheet and roast about 4 - 5 minutes until charred on top. (This happens quickly, so keep an eye on things. To ensure that the tomatillos roast evenly, choose tomatillos that are the same size. Since the jalapeno is smaller, keep an eye on it to make sure it doesn't overly char.)
  3. Rotate the vegetables to the opposite side and roast until charred as well (about 3 - 5 minutes longer). Slice pepper then add to a food processor or blender with tomatillos, onion, cilantro, garlic, salt, sugar, lime juice, and water. Adding any juices on pan brings extra flavor to your salsa.
  4. Pulse several times to a get a coarse consistency. Stir in more water to thin out the salsa, if desired. Chill through in refrigerator in an airtight container until serving.
