- Place the onions, broth, black eyed peas, apple cider and apple cider vinegar into the slow cooker. Place the ham into the slow cooker.
- Stir together the maple syrup and mustard and drizzle over the ham.
- Cover and cook on low for 4 to 5 hours, or until the ham is warm all the way through and peas are cooked.
- Uncover and add collard greens. Cover and cook on high for 1 hour or until tender. Season with salt and black pepper to taste. Spoon juices over ham and enjoy.
