- In a large bowl, add the yeast to the water. Let stand for 5 minutes. Add the honey, olive oil, 3 cups of the flour and salt. Mix together using a dough hook. Add more flour as necessary to get a smooth dough. The dough should still be a little sticky.
- Lightly flour a work surface and turn the dough out. Gently knead the dough for about 3-4 minutes. Spray the mixing bowl with cooking spray. Shape the dough into a round and place into the greased bowl. Cover the bowl with plastic wrap and place in a warm area in the kitchen. Let the dough rise about 1-2 hours, until doubled in size. Knead again a few times and let the dough rise again, another hour. Divide the dough in half and shape into two rounds. Cover loosely with plastic wrap and let rest for 5-10 minutes.
- Roll one round out on a lightly floured work surface with a rolling pin. Place the pizza dough onto a parchment lined half sheet pan. Let rest while you preheat the grill. Lightly oil the grill with either oil. Place the uncooked pizza dough directly on the grill on medium to high heat, for 3-4 minutes each side. Flip the dough using a pair of tongs.
- Take the pizza dough off the grill and place on a parchment lined half sheet pan. Top with a little marinara sauce, shredded chicken, grilled red onion, bell peppers, and shredded pizza blend cheese. Drizzle with a little barbecue sauce. Place the entire pan back on the grill, on high heat until the cheese is melted nicely. Slice and enjoy.
